Meanwhile, I’m yearning to bake, the stores are shut, or I just can’t muster the energy to head out.
Every time I dash to the kitchen, I make an abrupt U-turn because my ingredient list just doesn’t match up.
Occasionally, I get desperate and call a friend. You know those moments when you’re staring at a recipe, wishing that missing egg could somehow appear via phone?
In the days gone by, when life felt cheaper and neighbours were more approachable, you could just lean over the fence and borrow a spoonful of Holsum, a cup of sugar, or even a teabag.
No one sighed dramatically, nobody acted like you were asking for a kidney, and the whole neighbourhood didn’t find out your business before sunset.
These days, it’s different. Either we’re both out of the same items, or frankly, I don’t want the world knowing I had to borrow an egg just to satisfy a baking itch.
But instead of giving up on my baking endeavors, I turn to Google.
That’s when I discovered that some of the best baking hacks are simple ingredient swaps.
No buttermilk? Just mix a little lemon juice or vinegar into milk.
No eggs? A ripe banana can save the day.
No self-raising flour? You can whip up your own.
Soon enough, that recipe you nearly gave up on is back in action.
It’s the kind of kitchen wisdom our mothers and grandmothers probably knew by heart, long before search engines existed.
They simply found a way.
That’s why this week’s recipes focus on clever baking substitutes that can rescue your culinary plans when you’re missing that one crucial ingredient.

NO-BUTTERMILK SCONES (see image above)

No buttermilk? Easy—make your own:
- 1 cup milk
- 1 tbsp lemon juice or white vinegar
Mix well and let it sit for 5-10 minutes before use.
Ingredients
Your homemade Buttermilk
2 cups self-raising flour
Pinch of salt
60g butter
2 tbsp sugar (optional)
Method
Preheat the oven to 200°C.
Combine the flour, salt, and sugar.
Rub in the butter until the mixture resembles breadcrumbs.
Stir in the homemade buttermilk to form a soft dough.
Pat out the dough and cut into rounds.
Place them on a greased baking tray.
Bake for 12-15 minutes until golden.
Serve warm with butter and jam.
EGGLESS BRAN MUFFINS

No eggs? Substitute with a mashed banana for each egg needed.
Ingredients
1 ripe banana, mashed
1 cup bran flakes, crushed
1 cup milk
¾ cup brown sugar
⅓ cup oil
1 tsp vanilla essence
1½ cups self-raising flour
1 tsp cinnamon
Method
Preheat the oven to 180°C and grease a 12-hole muffin tin.
Soak the bran flakes in milk for 5 minutes.
Mix in the mashed banana, sugar, oil, and vanilla essence.
Incorporate the flour and cinnamon until just combined.
Spoon the mixture into the muffin tin.
Bake for 18-20 minutes or until golden brown.
Let cool before serving.
NO SELF-RAISING FLOUR DATE LOAF

- 1½ cups cake flour
- 3 tsp baking powder
- ½ tsp salt
Ingredients
250g pitted dates, chopped
1 cup boiling water
1 tsp bicarbonate of soda
75g butter
¾ cup brown sugar
1 egg, beaten
Method
Preheat the oven to 180°C and grease a loaf tin.
Place the dates in a bowl and pour boiling water over them.
Add the bicarbonate of soda and let cool for 10 minutes.
Stir in the butter until melted.
Mix in the brown sugar and beaten egg.
In another bowl, combine the cake flour, baking powder, and salt.
Gently fold the flour mixture into the date mixture until combined.
Pour into the prepared loaf tin.
Bake for 45-50 minutes, or until a skewer inserted into the center comes out clean.
Allow to cool before slicing.
NO-BROWN-SUGAR GINGER BISCUITS

No brown sugar? Make it by mixing:
- 1 cup white sugar
- 1 tbsp molasses
Ingredients
125g softened butter
1 cup homemade brown sugar
1 egg
2 cups cake flour
1 tsp bicarbonate of soda
1 tsp ground ginger
½ tsp cinnamon
Pinch of salt
Method
Preheat the oven to 180°C and line or grease a baking tray.
Mix the white sugar and molasses until well combined.
In a bowl, cream the butter and homemade brown sugar until light and fluffy.
Add the egg and mix well.
In another bowl, combine the flour, bicarbonate of soda, ginger, cinnamon, and salt.
Add the dry ingredients to the butter mixture and combine into a dough.
Roll tablespoonfuls of dough into balls and place on the baking tray.
Slightly flatten with the back of a fork.
Bake for 10-12 minutes or until the edges are lightly golden.
Let cool on the tray for a few minutes before transferring to a wire rack.
Makes approximately 24 cookies.
